What's the part of a model that you don't look forward to doing? With me, it's undercarriage - always a groan when I realise that I can't put it off any longer! Roll on the day when undercarriage simply slots neatly into place, doesn't involve many fiddly pieces, and the wheels don't snap off their axles!

the points on the front of planes and little ariels that i always break off the next time i pick up a model -

I hate windows. One tiny splodge of glue in the wrong place, or if you touch it in the wrong place and its ruined.
I also am scared of painting areas with windows although Ive learnt the theory of masking them off, so that may be a pet hate removed from my listComment

Got to be making up individual track link for me - they look great but man are they BORING!!!
I'm going to have a go at riveting my next 1/32 scale aircraft, this may even beat track link as the most tedious modelling task!
Also, not particularly fond of filling and sanding!!!
All of the above do make for a great looking model though

For painting, it's the canopy
For assembly, its those tiny pitot tubes that are already attached to the body and easily snap offComment

I'm with Adrian,little bits that are molded with the fuselage/wing which should be seperate and usually are within ten minutes of starting anyway!
The only other thing I can think of which sometimes leaves me a little crestfallen is shrinking filler. Sometimes it only reveals itself when you start to paint which is a bit annoying.

Masking canopies and removing masking tape from paint work. Ususally goes with out to much grief, but you never know untill you pull it off!
Discovering yet again that that very colour you need to finish the job is exactly the one you dont have!!!
Going for a new blade for the knife to find that you took the last one in the pack the last time.....

My pet hate is cleaning the airbrush between colour changes , and I`m with Lady Phoenix on the windows one , no fun at all
