As I don't do Xmas - or fish or fowl - I guess I'll be sticking to my usual three course meal of bread, butter and jam. I might liven up the festivities on Xmas morning though with a three course breakfast of cereal, milk and sugar - but only if I feel up to the strain of all the preparation!Comment

If she were to make a break for it and succeed and once she left the safety of the compound she would
not last 24 hrs.
Any predator (there are many) would catch her up lickety split, and her end would be anything but
humane or quick. :thinking:

Wild geese are a totally different animal from farm raised or super market fare, just as wild turkey to "domesticated".
Basically the same cooking rules as turkey, use a thermometer and the same instructions for turkey.
I cannot control my laughter when I'm at the super market with the Missus and see the prices they charge
for a frozen goose. 50 or 60 dollars for a 12 pounder!
We have 15 to 20 pounders running around all over the place :smiling2:

They will charge £80 for a 5-6 Kg goose in the UK! I found this out to my dismay a couple of years ago when Mr Fox disrupted my usual supply.
I usually have two, one for Christmas and one for the other half of the family at New Year, but get them from a friend of a friend for a considerably more modest price. Just as well as my name isn't Croesus!
