Saraf is Arabic/Muslim Boy name and meaning of this name is "Money Changer
 
That explains why it’s got those containers under the wings and all those chutes around the mid section, then: for holding money and dispensing the change.

However, the AH-64DI Saraf is an Israeli variant:

The name is “שׁרף” (S-R-F) in Hebrew, which apparently means “resin”. I guess the yellowish parts are cast in that? ;) Based on the caption of the picture above, though, I’m guessing it actually translates as “serpent” but you probably need to speak Hebrew to tell the words apart.
 
Stood next to one some years back and was surprised at just how large it is for a dedicated two seater!! Would be interested in building one I have to say.
Got to be large for 'Arry, his ego and frozen todger to fit in.....
 
I found "School for Advanced Residue Analysis in Food" and "Soreq Applied Research Accelerator Facility" but I'm not sure why either of those would need a military helicopter. The Soleq accelerator is in Israel though...

Why is it called a stake truck?

Essentially, a stake body truck follows the design of a standard flatbed, but with sockets along the edge that allow upright stakes to be fixed.
 
Another one of those “why not release one kit with optional parts?” type of deals, IMHO.
